Making Leftover Roast Chicken Pie, Step by Step

Heat the oven to 200°C / 390°F (180°C / 355°F fan). Melt the butter in a pan over medium heat and cook the leeks for 6 minutes until soft.

Stir in the flour for 1 minute, then add the stock and milk gradually, stirring, and simmer for 4 minutes until thick.

Add the chicken, peas, thyme and salt and warm for 3 minutes. Tip into a 1 litre pie dish and cool for 15 minutes.

Roll the pastry slightly bigger than the dish, lay it over the filling, press the edge and cut a slit. Brush with egg.

Bake for 25 minutes until golden.
