Behind the Recipe
Rub the lemon zest into the sugar before you start, and everything else in the recipe tastes better. That is the single most useful instruction here.
The oils in the zest carry most of the lemon flavour, and the sugar crystals break them out. Two minutes of rubbing with your fingers turns the sugar pale yellow and fragrant. Zest, not juice, gives the flavour. Juice adds sourness but also water, which can make a sponge heavy.
Cream the butter and lemon sugar until pale and fluffy, about 4 minutes. Add the eggs one at a time with a spoonful of flour, then fold in the rest of the flour and 1 tablespoon of juice.
Bake at 180°C for 20 minutes. If your oven runs hot, check at 16 minutes. Cool fully, then pipe or swirl on the buttercream, which carries the rest of the lemon juice. A few strands of lemon zest on top of each swirl make the cupcakes look finished.
