Lemon Grilled Fish with Asparagus
White fish fillets and asparagus grilled on one tray with lemon, garlic and a little butter. Four servings in 22 minutes.
Before You Start
Pat the fish dry; surface moisture stops it browning under the grill.
If your fillets are thin, move the tray further from the heat so the top does not scorch before the middle cooks.
Press the thickest part of the fish to check; the flesh should flake easily and look opaque all the way through.

-
Heat the grill to high with the rack about 10 cm below it. Line a baking tray with foil and brush it with a little of the olive oil.
-
Toss the asparagus with half the remaining oil and a pinch of the salt on one side of the tray. Pat the fish dry, brush it with the rest of the oil, season with the remaining salt and the pepper and lay it on the other side.
-
Grill for 6 minutes. Meanwhile, stir the melted butter, lemon juice, lemon zest and garlic together.
-
Brush the lemon-garlic butter over the fish and grill for 4 to 6 minutes more, until the fish is opaque and flakes easily and the asparagus is tender and lightly charred. Scatter with the parsley.
What's Going On Here
How do you grill fish without it sticking or falling apart? Oil the tray and the fish, then leave it alone. Do not turn it. Firm white fish such as cod or haddock holds together best, and one side under a hot grill is enough, because the heat cooks it through from above.
The asparagus goes on the same tray, so the whole dinner is one pan and one grill. Snap off the woody ends first; each spear breaks where the tough part begins. Thin spears cook in the time the fish takes. Thick spears need longer. Start them a few minutes ahead of the fish. The lemon-garlic butter goes over the fish near the end, so the garlic does not burn.
Lemon is the whole sauce here, so use a fresh one: the juice for brightness and the zest for the oil in the peel. Squeeze extra lemon over each plate. Serve with a green salad or steamed green beans.
