Heat the oven to 220°C / 425°F. Line a baking tray with foil and set a wire rack on top.

Pat the wings completely dry with kitchen paper, then toss them in a large bowl with the baking powder, 1 tsp salt and the first 0.5 tsp of garlic powder.

Bake for 25 minutes, turn the wings over, and bake for 20 to 25 minutes more, until deep golden and crisp and the thickest part reads at least 80°C / 175°F.
