Heat the oven to 200°C / 390°F (180°C / 355°F fan). Prick the potatoes, rub with the oil and half the salt and bake directly on the shelf for 1 hour until the skins are crisp.

Split each potato along the top and open it. Fluff the flesh with a fork, add the butter and the remaining salt.
