How to Make Lobster Newburg

  1. Melt the butter in a wide, heavy pan over medium-low heat. Add the lobster and warm it for 2 minutes, turning gently, until it is coated and glossy. Do not let it brown.

  2. Pour in the sherry, turn the heat up and simmer for 2 minutes, until reduced by half.

  3. Whisk the cream and egg yolks together in a bowl. Whisk in a ladleful of the hot liquid from the pan, then pour the mixture back into the pan.

  4. Cook over low heat for 4 minutes, stirring constantly with a wooden spoon, until the sauce has thickened enough to coat the back of the spoon. Do not let it boil, or the yolks will scramble.
