  3. Shake hard for 10 to 12 seconds until the shaker is very cold.

  5. Garnish with the spent lime shell, floated on the top, and the mint sprig, slapping the mint against your hand first to release its scent.

Tips for Making Mai Tai

  • Use fresh lime juice, and a good aged rum. There is nothing in the drink to hide either, and it is the quality of both that shows.
  • Shake hard and pour everything into the glass, ice and all. The dilution is part of the recipe.
  • Slap the mint before you use it. The aroma is the first thing you notice as you drink, and it makes a difference to the taste.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.

What to Serve with Mai Tai

  • Coconut shrimp
  • Grilled pineapple

Storing & Reheating Mai Tai

Best made to order and drunk at once. Orgeat keeps in the fridge for up to 2 weeks after opening, and shaking it well before use keeps it smooth.
