Marionberry Pie: The Method

  1. Heat the oven to 200°C / 390°F with a baking tray inside. Roll out half the pastry and line a 23 cm pie dish.

  2. Toss the berries gently with the 150 g sugar, cornflour, lemon juice and salt. Pile into the pastry case.

  3. Roll out the remaining pastry for a lid. Lay it over the top, seal the edge and cut a few vents. Brush with egg and sprinkle with the 1 tbsp sugar.

  4. Bake on the hot tray for 50 minutes until deep golden and bubbling. Cool for 2 hours before cutting.

Worth Knowing

  • Handle the berries gently to keep them whole.
  • Use a tray under the pie to catch any drips.
  • Do not cut the pie until it has cooled, or the filling will run.

Why the Method Is What It Is

What is a marionberry, and does it matter in a pie? It does. Marionberries are a type of blackberry, grown in Oregon, that are sweeter, more aromatic and less seedy than ordinary blackberries, with a deep wine-like flavour. If you cannot find them, blackberries are the nearest substitute, and the recipe is the same.

The filling is just fruit, sugar, cornflour and a little lemon juice. Berries release a lot of liquid as they cook, so the cornflour is essential: it turns the juices into a thick, glossy sauce that holds when the pie is cut. Toss the fruit gently, because crushed berries make the filling muddy.

Bake the pie on a hot tray so the base browns, and cover the edge with foil if it darkens too soon. The filling should be bubbling through the vents when it comes out. Then comes the hard part: waiting for it to cool for 2 hours, which lets the filling set. A warm pie is a runny pie.
