Sift the matcha. That is the short, sharp instruction that stops the cheesecake being freckled with green lumps. Matcha is a very fine powder, but it clumps in the packet.

Make the base from crushed biscuits and melted butter and press it firmly into the tin. Mix the matcha with the sugar first, then beat it into the cream cheese on a low speed until smooth. The sugar keeps the powder from clumping in the fat. Use good matcha. Cheap powder tastes bitter and turns a dull brown-green when baked.

Beat in the eggs one at a time, then the cream and vanilla, still on low. Pour onto the base.

Bake at 150°C / 300°F for 50 minutes, until set with a slight wobble. Leave in the oven with the door ajar for 30 minutes to cool, then chill for 4 hours. Dust with a little more matcha before serving. Ceremonial grade matcha is not needed, but a culinary grade of good colour is worth the extra.
