How to Make Meat and Potato Pie

  1. For the pastry, rub the lard and butter into the flour and salt with your fingertips until it resembles breadcrumbs.

  2. Stir in the water with a knife until the dough comes together, then form it into one large and one small disc, wrap, and chill for 30 minutes.

  3. Heat the oil in a large heavy pan and brown the beef in two batches over high heat for 6 minutes each. Lift it out.

  4. Cook the onion in the same pan for 6 minutes, then stir in the flour for 1 minute.

  5. Add the stock, Worcestershire sauce, bay leaf, salt and pepper, return the beef, and simmer covered for 1 hour 15 minutes, until tender.

  6. Add the potatoes and simmer uncovered for 15 minutes, until they are tender but whole and the gravy is thick. Discard the bay leaf.

  7. Let the filling cool for 30 minutes.

  8. Heat the oven to 200°C / 400°F. Roll the larger pastry disc to line a 23 cm pie dish, about 4 cm deep, and spoon in the cooled filling.

  9. Brush the pastry rim with egg, roll the smaller disc into a lid and lay it on top, then press the edges together and trim. Cut a steam hole and brush all over with egg.

  10. Bake for 35 to 40 minutes, until deep golden and the filling is piping hot. Rest for 10 minutes before cutting.

  • Cool the filling before it goes into the pastry. A hot filling melts the fat in the base, which then bakes soggy and pale.
