How to Make Mimosa

Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.

  1. Chill a Champagne flute in the fridge or freezer for a few minutes, and make sure that both the wine and the juice are well chilled.

  2. Tilt the flute and pour in the sparkling wine slowly, so that it does not foam up.

  3. Top with the orange juice, pouring it gently down the side of the glass.

  4. Stir once, very gently, with a bar spoon. Garnish with a twist of orange peel and serve immediately.

Tips for Making Mimosa

  • Squeeze the juice fresh, and strain out the pulp. It gives a brighter flavour than carton juice, and the pulp makes the fizz collapse.
  • Choose a dry sparkling wine. A sweet one, added to sweet juice, makes a cloying drink.
  • Pour the wine first and the juice second. The wine foams less this way, and the two mix themselves without stirring.

What to Serve with Mimosa

  • Eggs Benedict
  • Smoked salmon and bagels
  • Fresh berries

Storing & Reheating Mimosa

Make each glass to order. For a crowd, pour a 750 ml bottle of sparkling wine and 750 ml of juice into flutes as guests arrive, and never mix them ahead, since the bubbles die within minutes.
