Mint Sauce

Finely chopped fresh mint, sugar and vinegar, left to infuse. The sharp, green sauce for roast lamb. Ten minutes, plus a stand.

  1. Strip the mint leaves from the stalks and chop them very finely, sprinkling with a little of the sugar as you chop to stop them sticking to the board.

  2. Put the chopped mint in a small bowl with the rest of the sugar and the hot water and stir until the sugar has dissolved.

  3. Stir in the vinegar and salt.

  4. Taste and adjust: it should be sharp, lightly sweet and very minty.

  5. Leave to stand for 30 minutes before spooning into a small jug.
