  1. Toast the pumpkin seeds in a dry pan for 3 minutes until they swell and pop. Cool, then grind to a fine powder.

  2. Boil the tomatillos, chillies, onion and garlic in water for 8 minutes. Drain and blend with the coriander, parsley, lettuce, ground seeds and 250 ml of the stock until smooth.

  3. Heat the lard in a wide pot and fry the sauce for 10 minutes, stirring constantly, until thickened.

  4. Add the remaining stock, salt and the chicken and simmer for 15 minutes until the sauce coats a spoon.

What's Going On Here

It is a mole that is bright rather than dark, and herbs rather than chocolate are its signature. Mole verde is made with raw pumpkin seeds, called pepitas, which give the sauce its body and a nutty richness, and with a large handful of fresh green things: coriander, parsley, lettuce, radish leaves or epazote. The sauce is the colour of grass, and the flavour is fresh, tangy and mild.

Toast the pumpkin seeds in a dry pan, stirring, until they swell and begin to pop, about 3 minutes. Don't let them brown, or the sauce loses its green colour. Colour is the thing to protect. Cool them, then grind to a fine powder in a blender before adding anything else.

Simmer tomatillos, serrano chillies, garlic and onion for 8 minutes, then blend with the herbs and ground seeds, adding stock until the mixture is smooth and pourable. Strain if you wish.

Fry the sauce in lard or oil for 10 minutes, stirring constantly. It will thicken, darken a little and smell cooked. Add the poached chicken and simmer for 15 minutes more. The final sauce should coat the back of a spoon. Serve with rice and tortillas.

Storage and Reheating

Keeps in the fridge for 3 days. The colour dulls but the taste holds.

If You're Missing Something

  • Dried chilli flakes can stand in for the chillies. Heat varies a great deal between chillies and between jars, so start with a small pinch and add more to taste.
  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.

What to Serve Alongside

  • White rice
  • Warm tortillas
  • Refried beans
  • Pickled onions
