Heat the oven to 180°C / 350°F (160°C / 320°F fan) and line 2 baking trays with baking parchment.

Beat the 115 g butter with the sugar for 3 minutes, until pale and fluffy. Beat in the egg, honey and vanilla. Mix the flour, biscuit crumbs, baking powder and salt, and stir into the butter mixture with the milk to make a soft dough.

Roll the dough out between two sheets of baking parchment to 5 mm thick. Cut 24 rounds, about 6 cm across, and set them on the trays. Re-roll the scraps to cut the rest.

Bake for 10 to 12 minutes, until set and lightly golden at the edges. Cool on the trays for 5 minutes, then move to a wire rack to cool completely.

Melt the marshmallows with the 40 g butter in a heatproof bowl over a pan of barely simmering water, stirring until smooth. Take off the heat and spread about 2 tablespoons of the warm filling over the flat side of 12 of the cookies. Top each with a second cookie, pressing down gently.

Melt the chocolate with the oil in a clean bowl over the pan of hot water. Dip each pie in the chocolate to coat it, lift it out with a fork to drain, and set it on a wire rack over a tray. Leave to set for 30 minutes.
