  1. Fill a copper mug, lined with stainless steel or nickel, or a tall glass right to the top with ice.

  2. Pour in the vodka and the lime juice.

  3. Top with the ginger beer and stir once, gently, to combine.

  4. Squeeze the lime wedge over the drink and drop it in with the mint sprig.

Chef’s Tips

  • Use a ginger beer with a real ginger bite and not ginger ale. Ginger ale is sweet and mild, and the drink loses its heat.
  • Chill everything, including the mug, the vodka and the ginger beer. The ice then melts slowly, and the drink stays fizzy.
  • Stir once and gently. Stirring hard drives out the fizz.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.
  • A quarter-teaspoon of ground ginger per tablespoon of fresh is the standard ratio if you are working from the spice rack rather than a fresh root.

Pairing Suggestions

  • Pork sliders
  • Spicy nachos
  • Fish tacos

Storage & Reheating

Made to order. Once the ginger beer is poured it goes flat within minutes, so build the drink just before you drink it.
