Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.

  1. Drizzle the chocolate syrup around the inside of a tall glass, turning the glass so that it runs down in streaks. Put the glass in the freezer for 5 minutes, then fill it with ice.

  2. Fill a cocktail shaker with ice. Add the vodka, coffee liqueur, Irish cream and single cream.

  3. Shake hard for 12 to 15 seconds, until the shaker is very cold.

  4. Strain the drink into the prepared glass over the ice.

  5. Top with whipped cream and a dusting of cocoa, if you like, and serve with a straw.

Tips for Success

  • Chill the glass after you have added the chocolate syrup. The cold makes the syrup cling to the sides, and the streaks stay sharp.
  • Shake hard with plenty of ice. The drink contains cream and thick liqueurs, and it needs to be really cold and well mixed.
  • Make a frozen mudslide by blending the ingredients with a scoop of vanilla ice cream and a cup of ice, until smooth.

Why the Method Is What It Is

The Mudslide is a dessert cocktail that tastes like a milkshake for grown-ups, made from vodka, coffee liqueur and Irish cream, and served over ice in a glass lined with chocolate syrup. It is said to have been created at the Wreck Bar of the Rum Point Club, on Grand Cayman in the Cayman Islands, in the 1970s, where a bartender made a drink of vodka, coffee liqueur and Irish cream to a customer who had asked for something creamy, and it is thought to be named after the way that it slips down. It became a staple of beach bars and resorts in the Caribbean and the United States, and it spread as a frozen drink, blended with ice cream into something rather like a chocolate coffee milkshake. It is a simple cocktail with a rich taste. The three liqueurs have an equal part each, and a splash of cream makes it smoother and softens the alcohol, while the chocolate syrup that is swirled round the glass gives it a striking look and a taste of chocolate in every sip. Shake it hard with plenty of ice, to chill and dilute it, and strain it over fresh ice, so that the glass does not fill with broken fragments. The cream is best kept cold, and the quantity can be adjusted up or down according to how creamy you like it. For a frozen version, blend the same quantities with a large scoop of vanilla ice cream and a handful of ice.
