Mukimo
A Kenyan mash of potatoes, peas and sweetcorn with greens, mashed together and seasoned with salt and pepper.
Why does mukimo look green? Because the greens go into the pot and are mashed straight into the potatoes, so each forkful carries flecks of leaf, kernels of corn and the sweetness of peas. It is a Kenyan comfort food, hearty enough to be a meal on its own.
Boil the potatoes until completely tender, then drain and keep a cup of the cooking water. Dry potatoes mash into a stiff paste; water loosens it. Add the peas, corn and chopped greens to the pot for the last few minutes of cooking so they soften together. Mash everything while it is still hot. Cold potatoes turn gluey and will not blend with the vegetables.
Pumpkin leaves are traditional, but spinach, kale or any soft green works. Chop them finely so they blend in.
A spoonful of butter makes it richer. Serve the mukimo hot, with a stew such as beef or beans poured over the top.
