Wipe the mushrooms and mix the oil, vinegar, garlic and thyme. Brush the mushrooms with it and leave for 10 minutes.

Heat the grill to medium-high. Grill the mushrooms gills-up for 7 minutes, then turn and grill for 8 minutes more.

Lay a slice of cheddar on each for the last minute.
