  1. Scrub the mussels and pull off the beards. Discard any that are cracked or stay open when tapped.

  2. Soften the garlic and chilli in the oil for 1 minute. Add the wine and tomatoes and simmer for 8 minutes.

  3. Tip in the mussels, cover and cook over high heat for 5 minutes, shaking the pot, until they open. Discard any that stay shut.

  4. Stir in the salt and parsley and serve with the bread.

What's Going On Here

Mussels are cheap, fast and a little intimidating, and none of that is warranted. They need a good scrub, a hot lidded pot and about five minutes, and the cooking liquor makes the sauce.

Scrub the shells under cold water and pull away the beards. Discard any that are cracked or stay open when tapped, since a mussel that does not close was already dead. After cooking, throw out any that stay shut, because they were not alive to begin with.

Make the sauce first: soften garlic and chilli in olive oil, add the wine and tomatoes and simmer for 8 minutes until thick.

Tip in the mussels, cover tightly and cook over high heat for 5 minutes, shaking the pot once or twice. If your hob runs hot, check at 4 minutes. They are done when the shells open. Add parsley, give the pot a shake and serve in bowls with plenty of bread for the sauce.
