  1. Scrub the clams and mussels under cold running water, pull the beards off the mussels, and discard any that are open and do not close when tapped.

  2. Put the lobsters in the freezer for 20 minutes to make them sleepy before cooking.

  3. Put the onions, potatoes and sausage in a 12 litre pot with the water, lager and Old Bay, cover, and bring to the boil over high heat. Steam for 15 minutes.

  4. Lay the lobsters on top, head end down, cover, and steam for 12 minutes.
