  1. Line two baking trays with baking parchment.

  2. Put the sugar, milk, butter and cocoa in a medium saucepan over medium heat. Stir until the butter melts and the mixture comes to a rolling boil.

  3. Boil for exactly 1 minute, stirring, then take the pan off the heat.

  4. Stir in the peanut butter, vanilla and salt until smooth. Add the oats and stir quickly until they are coated.

  5. Drop heaped tablespoons of the mixture onto the lined trays, about 3 cm apart. Leave the cookies to set for 30 minutes at room temperature, until firm.
