Put the haddock, milk and bay leaf in a wide pan, bring to a bare simmer, and poach for 5 minutes, until the fish flakes. Lift the fish out, strain and keep the milk, and flake the fish, discarding the skin and bones.

Melt the 15 g butter in a small pan, stir in the flour, and cook for 1 minute. Whisk in 100 ml of the poaching milk and simmer for 2 minutes, until thick. Stir in the flaked haddock and half of the Parmesan and keep warm.

Beat the eggs with the salt and pepper. Melt half of the 20 g butter in a 20 cm non-stick frying pan over medium heat, pour in half of the eggs, and cook for 2 minutes, drawing the edges towards the middle, until just set with a soft top. Slide onto a heatproof plate and repeat with the rest.

Spoon the haddock sauce over each omelette, pour over the cream, and sprinkle with the remaining Parmesan.

Grill for 2 to 3 minutes, until bubbling and golden. Scatter with the chives and serve at once.
