One Pan Chicken and Rice: Step by Step

  1. Season the chicken with the salt. Heat the oil in a large lidded pan and brown the chicken skin-side down for 6 minutes. Pour off all but 1 tbsp of the fat.

  2. Soften the onion in the same pan for 4 minutes, add the garlic and paprika, then the rice for 1 minute.

  3. Pour in the stock, bring to the boil and set the chicken on top skin-side up. Cover and cook on low heat for 25 minutes.

  4. Scatter the peas over for the last 5 minutes. Rest for 5 minutes, fluff and serve with the parsley and lemon.
