Why It Works
It is the sort of supper that is mostly oven time: a tray of sausages, potatoes and onion that roasts while you do something else. The sausages release their fat, which crisps the potatoes, and everything tastes of everything else.
Cut the potatoes into 3 cm pieces, so they are done in the time the sausages need. Toss them with oil, rosemary, salt and pepper and spread them on a large tray. Crowding makes them steam, so use two trays if you need to.
Roast at 220°C for 15 minutes, then add the sausages and onion wedges, turn everything and roast for 20 minutes more. If your oven runs hot, check at 28 minutes.
The sausages should be browned all over and cooked through, the potatoes crisp at the edges. For the last 2 minutes, brush the sausages with a little mustard and honey, which gives a sticky, tangy glaze. Serve straight from the tray.
