Making Onion Turkey Burgers, Step by Step

  1. Mix the turkey, grated onion, egg white, half the oil, paprika, garlic powder and pepper in a bowl until just combined.

  2. Shape into 4 patties about 11 cm across, pressing the centres a little thinner. Chill for 10 minutes.

  3. Heat the remaining oil in a large non-stick frying pan over medium heat. Cook the patties for 6 minutes a side, until browned and the centres reach 74°C / 165°F.

  4. Toast the buns in the pan for 30 seconds. Spread with the mustard and fill with the lettuce, patties and red onion rings.
