Oysters Rockefeller
Oysters on the half shell, topped with a buttery spinach and herb mixture and breadcrumbs and baked until bubbling. The New Orleans classic.

Heat the oven to 230°C / 450°F. Spread the rock salt over a large baking tray and settle the oysters in their shells into the salt so they sit level.

Melt the butter in a large frying pan over medium heat. Cook the spring onions and garlic for 2 minutes. Add the spinach a handful at a time and cook for 2 to 3 minutes, until wilted. Stir in the parsley.

Tip the mixture into a sieve, press out as much liquid as you can and chop it finely. Return to a bowl and stir in the Pernod, hot sauce, panko, parmesan and salt.

Spoon a heaped teaspoon of the topping onto each oyster and spread it to cover.

Bake for 8 to 10 minutes, until the topping is golden and the edges of the oysters have curled.

Serve at once on the tray of rock salt with lemon wedges.
