A Little Background

Party pies are a small version of the Australian meat pie, made to be eaten in two bites with a dab of tomato sauce. The trick is the right size and a filling that is not runny.

Cook the mince with onion, then add flour and stock and simmer until it is thick enough to hold on a spoon. A loose filling leaks out of the case and softens the base.

Use a muffin tin and cut the cases from the shortcrust with a round cutter. Do not overfill: a heaped teaspoon is enough, because the filling spreads as it heats.

Top with puff pastry lids, pinch the edges and brush with egg. Cook at 200°C for 25 minutes until the tops are puffed and golden. If your oven runs hot, check at 20 minutes. Cool in the tin for 5 minutes before lifting out. They freeze well before cooking, so a double batch is worth making ahead of a party, and they cook from frozen with a few extra minutes.
