  1. Heat the oven to 175°C / 350°F (155°C / 310°F fan). Spread the pecans on a tray and toast for 8 minutes, until fragrant. Cool. Line 2 trays with baking parchment.

  2. Arrange the pecans in 24 clusters of 3 halves each, with the tips meeting in the centre, about 5 cm apart.

  3. Put the brown sugar, butter, cream, golden syrup and fine salt in a heavy saucepan over medium heat. Stir until the sugar has dissolved, then boil without stirring until the caramel reaches 118°C / 245°F on a sugar thermometer, about 8 minutes. Take it off the heat and stir in the vanilla.

  4. Working quickly, spoon about a tablespoon of caramel over the centre of each cluster, leaving the tips of the pecans showing. Leave to set for 20 minutes.

  5. Melt the chocolate in a heatproof bowl over a pan of barely simmering water. Spoon a teaspoon over each caramel and sprinkle with a few flakes of sea salt. Leave to set for 30 minutes.
