Making Penne Arrabbiata Bake, Step by Step

  1. Heat the oven to 200°C / 390°F. Boil the penne for 2 minutes short of the packet time, then drain.

  2. Warm the oil with the garlic and chilli for 30 seconds. Add the tomatoes, sugar and salt and simmer for 15 minutes until thick.

  3. Fold the penne, basil and half the mozzarella into the sauce and tip into a dish. Top with the remaining mozzarella and the parmesan.

  4. Bake for 20 minutes until golden and bubbling, then stand for 5 minutes.
