Pepper jelly is a Southern pantry staple, a glowing, translucent jelly with small flecks of pepper in it that is sweet at first and hot afterwards. It is made from sweet peppers and hot chillies, cider vinegar and a great deal of sugar, and set with pectin. It is best known as the simplest party appetizer in the American South: a block of cream cheese, with a jar of pepper jelly poured over it, and a box of crackers next to it. The combination of tangy, cool cheese and sweet, hot jelly disappears from the table faster than anything else. It is also used as a glaze on ham, pork and chicken wings, spooned on a cheese sandwich, stirred into a vinaigrette, or spread on a burger. The colour depends on the peppers. Red peppers make a jelly that is a deep red or orange, and green peppers a pale, bright green, and the heat depends on how many jalapeños or other chillies go in and whether their seeds are kept. The main technical point is the set. The jelly is boiled with the sugar and vinegar first and the pectin is stirred in at the end, and it is boiled hard for exactly one minute, and no longer. It may look thin in the pan, but it sets as it cools in the jars over a day. Chop the peppers finely but do not purée them, so that there are small flecks in the jelly.

How to Make Pepper Jelly

  1. Wear gloves to prepare the jalapeños. Put the red peppers, jalapeños and 120 ml of the vinegar in a food processor and pulse until finely minced but not puréed.

  2. Scrape into a large, heavy saucepan and add the remaining vinegar and the sugar. Bring to a full rolling boil over high heat, stirring, and boil for 10 minutes.

  3. Stir in the liquid pectin, return to a full rolling boil and boil hard for exactly 1 minute, stirring constantly. Take the pan off the heat and skim off the foam.

  4. Let the jelly stand for 5 minutes, stirring gently, so the pieces of pepper are evenly spread through it and do not all float to the top.

  5. Ladle into hot sterilised jars to within 6 mm of the top, wipe the rims and seal at once. Cool.

  6. To serve, spoon over a block of cream cheese and serve with crackers.
