Method

  1. Mix the garlic, oregano, salt, pepper, oil, vinegar, orange juice and lime juice in a bowl to make the adobo.

  2. Score the skin of the pork in a diamond pattern. Stab the meat all over with a small knife, about 2 cm deep, and push some of the adobo into each hole. Rub the rest all over the meat and under the skin.

  3. Wrap and refrigerate for at least 12 hours.

  4. Heat the oven to 165°C / 325°F. Set the pork, skin side up, in a deep roasting tin and cover tightly with foil.

  5. Roast for 4 hours, until the meat is very tender and reads at least 90°C in the middle.

  6. Remove the foil, raise the oven to 220°C / 425°F and roast for 30 to 40 minutes, until the skin is puffed, golden and crackling.

  7. Rest for 20 minutes, then break off the crackling and pull or slice the meat.

  • Push the adobo deep into the meat. Rubbing it on the surface flavours only the crust.
  • Roast covered for the first four hours, so the meat steams tender in its own juice.
  • Dry the skin with paper towels before the final blast. Damp skin will not crackle.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.
  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
