  • No self-raising flour to hand? Use the same weight of plain flour plus 2 teaspoons of baking powder per 150 g.

A Little Background

A pocket is a pizza folded shut, and it solves the problems of a pizza: it travels, it keeps in a lunchbox, and the filling cannot slide off. The trick is to seal it properly.

The dough is the same quick mix of self-raising flour and yogurt as the breadsticks, so no yeast and no waiting. Roll it 4 mm thick and cut into 6 squares.

Keep the filling dry. A small spoonful of thick sauce, a pinch of cheese and a few slices of pepperoni is the right amount. Too much and the pocket bursts as the steam builds inside.

Brush the edges with water, fold the dough over and press down with a fork. Prick the tops so steam can escape. Brush with beaten egg for a deep gold. The pockets freeze well after baking and reheat from frozen in a hot oven. They are good for a packed lunch, and can be filled with ham and cheese or with leftover cooked vegetables for variety.
