Why It Works
Pork ribs, a dry rub, foil and time: four things, and the time does most of the work. Low heat for a long time turns the tough meat tender and lets it pull away from the bone.
Peel the thin membrane from the back of the rack if you can, because it stays tough and chewy. Mix the paprika, sugar, garlic powder, salt and pepper and rub it over both sides. Wrap the ribs tightly in foil, which traps steam and keeps them moist. Seal the foil well. A leaky parcel dries the meat out.
Bake at 150°C / 300°F for 2 hours. Open the foil, brush with barbecue sauce and bake uncovered at 220°C / 430°F for 30 minutes until sticky and lightly charred. If your oven runs hot, check the glaze at 20 minutes.
Rest for 10 minutes, then cut between the bones. If the ribs are not tender after 2 hours, rewrap them and bake for another 20 minutes.
