Wipe the mushroom caps clean with a damp cloth and use a spoon to scrape out the dark gills.

Whisk the balsamic vinegar, olive oil, garlic, thyme, soy sauce, salt and pepper in a shallow dish. Add the mushrooms, turn to coat, and leave to marinate for 30 minutes, turning once.

Heat a grill, barbecue or griddle pan to medium-high. Grill the mushrooms cap side down for 5 minutes, then turn, brush with any remaining marinade and grill for 4 to 5 minutes more, until tender and browned.

Lay a slice of cheese on each mushroom for the last minute, until it melts. Toast the buns, cut side down, on the grill for 1 minute.

Spread garlic mayonnaise on the bases of the buns and layer with rocket, red pepper and a mushroom. Cover with the tops and serve.
