Making Potato Croquettes

  1. Boil the whole potatoes for 25 minutes until tender. Peel while hot, then mash until smooth with no milk. Spread on a plate to cool completely.

  2. Mix the mash with the cheese, chives, egg, salt and pepper.

  3. Shape into 12 logs about 6 cm long. Roll each in the flour, then the beaten egg, then the breadcrumbs. Chill for 30 minutes.

  4. Heat the oil in a deep pan to 180°C / 355°F. Fry in batches for 3 minutes, turning, until deep golden. Drain on kitchen paper.

Dry mash is the key to a croquette that holds together. If the potato is wet, the croquettes burst in the oil and spill their filling in a mess.

Boil the potatoes in their skins if you can, which keeps the water out, then peel while hot with a fork and knife. Mash without milk and cool completely: the mixture needs to be cold and stiff to shape.
