  1. Season the chicken with the salt. Heat the oil in a wide pan and brown the thighs for 10 minutes, skin side down first. Lift out.

  2. Cook the shallots and garlic in the pan for 2 minutes. Add the vinegar and boil for 2 minutes until reduced by half.

  3. Stir in the tomato purée, stock and chopped tomatoes and return the chicken.

  4. Cover and simmer for 30 minutes until cooked through. Uncover and simmer for 5 minutes to thicken.

  5. Take off the heat, stir in the cream and parsley and taste for salt.

Why It Works

The smell of vinegar hitting a hot pan is sharp, and it is the first clue that this is a dish that tastes better than it smells. Boiled down with tomato and finished with cream, red wine vinegar loses its harshness and turns into a mellow, tangy sauce that cuts through the richness of the chicken.

Brown the chicken pieces well on all sides, as the base of the sauce is the browned bits stuck to the pan. Set the chicken aside, soften the shallots and garlic, and then pour in the vinegar. Let it bubble for a full 2 minutes until the sharp smell mellows and the liquid has reduced by half. Skipping this step leaves a raw, acidic taste in the finished dish.

Add the tomato and stock, return the chicken and simmer until it is cooked through and the sauce has thickened. Stir in the cream at the end, off the heat, to round the flavour. If it tastes too sharp, a pinch of sugar or a bit more cream fixes it. Serve with rice or potatoes to soak up the sauce.

Leftovers, Reheating and Keeping

Keeps for 2 days in the fridge. Reheat gently.

Swaps and Variations

  • In a sauce, full-fat crème fraîche can usually take the place of the double cream; single cream is thinner and more likely to split if it boils, so keep it below a simmer.
  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
