  1. Line two baking trays with parchment paper.

  2. Put both sugars, the cream, butter and salt in a heavy saucepan and stir over medium heat until the sugar dissolves. Bring to a boil and cook, stirring occasionally, for 8 to 10 minutes, until a sugar thermometer reads 115°C / 240°F.

  3. Take the pan off the heat and stir in the pecans and vanilla. Beat with a wooden spoon for 1 to 2 minutes, until the mixture thickens and loses its gloss.

  4. Working quickly, drop tablespoons of the mixture onto the paper, spacing them apart, and leave them to set for 30 minutes.
