A pulled chicken sandwich takes the meat from the slow cooker or the oven and puts it where it can be eaten with one hand. It is all about balance: rich meat, sweet sauce, sharp slaw and a soft bun.

Start with cooked pulled chicken, 600 g, shredded finely. Warm it in a pan with the barbecue sauce and a splash of water for 10 minutes, until it is hot and sticky and coats the meat. Do not let it boil dry, or the sauce catches and burns.

The slaw is not optional. Mix shredded cabbage and carrot with mayonnaise and a spoon of cider vinegar, and the crunch and acidity cut through the richness of the chicken.
