How to Make Pumpkin Roll

  1. Heat the oven to 190°C / 375°F (170°C / 340°F fan). Grease a 25 x 38 cm Swiss roll tin and line it with baking paper, greasing the paper as well.

  2. Whisk the eggs and caster sugar with an electric whisk for 3 to 4 minutes until thick and pale. Whisk in the pumpkin purée and lemon juice.

  3. Sift over the flour, baking powder, cinnamon, ginger, nutmeg and salt and fold in gently until just combined.

  4. Spread the batter evenly in the tin and bake for 12 to 14 minutes until the cake springs back when pressed.

  5. While the cake bakes, spread a clean tea towel on the counter and dust it generously with the 30 g of icing sugar.

  6. As soon as the cake comes out, run a knife around the edge and turn it out onto the towel. Peel off the paper and roll the cake up in the towel from a short end. Leave it to cool, rolled, for 1 hour.

  7. Beat the cream cheese, butter, 120 g of icing sugar and the vanilla together until smooth.

  8. Unroll the cooled cake, spread the filling over it to within 2 cm of the edges and roll it up again without the towel. Chill for 30 minutes to firm up.

  9. Dust with a little icing sugar and slice with a serrated knife.

  • Use plain pumpkin purée. Pumpkin pie filling contains sugar and spices, and it will throw off the balance of the cake.
  • Chill the filled roll before slicing. The filling firms up and gives clean slices with a neat spiral.
