Why the Method Works
Raspberries, sugar, lemon juice and a little water: four things, and one of the quickest sauces there is. A coulis is a thin, smooth fruit sauce, made to be spooned or drizzled over a dessert.
Simmer the raspberries with the sugar and water for 5 minutes, just until the berries collapse and the sugar dissolves. Do not boil it for long, since a long cook dulls the colour and turns the fresh fruit taste to jam. Press the mixture through a fine sieve with the back of a spoon to remove the seeds, which are hard and bitter. Press, do not stir. Pushing the pulp through leaves the seeds behind, and stirring clogs the mesh.
Stir in the lemon juice off the heat, which sharpens the flavour and brightens the colour. Taste and add a little more sugar if the berries were tart.
Serve it cold over cheesecake, panna cotta, ice cream or meringues.
