A Few Pointers

Behind the Recipe
What makes a good schnitzel crust ripple and puff away from the meat? Plenty of fat in the pan, and a swirl of the pan. Řízek is the Czech schnitzel, made from pork or veal beaten flat, coated in flour, egg and fine crumbs and fried in lard or oil, and it is served on Sundays with potato salad.
Beat the cutlets between sheets of cling film to 5 mm, so that they cook in minutes. Season with salt and dust with flour, dip in beaten egg and press into fine breadcrumbs. Do not press the crumbs on too hard, so that there is room for them to puff in the pan. Heat the lard or oil in a wide pan to a depth of 1 cm, and fry the cutlets over medium high heat for 2 to 3 minutes on each side, shaking the pan to wash the fat over the tops.
The crust should be pale gold, loose and puffed. Drain on kitchen paper, serve with a lemon wedge and a mound of potato salad dressed with vinegar, onion and a spoonful of mayonnaise. Eat at once while the crust is crisp, and pour a little more lard over the cutlet if you like.
