The oven does the work. Vegetables spread out on a hot tray and left alone for 25 minutes turn sweet and soft with dark edges, and the tray juices become the sauce.
Cut everything to a similar size, about 2.5 cm. Courgette gives off water, so give it the most room, and put the pepper and onion around it.
The tomatoes go in whole or halved, and they burst in the heat to make a loose sauce on the tray. Scrape up every bit with the pasta.

Heat the oven to 220°C / 430°F (200°C / 390°F fan). Spread the courgettes, peppers, onion, tomatoes and garlic on two trays and toss with the oil, salt and oregano.
