How to Make Rough Puff Pastry

Mix the flour and salt in a large bowl, add the cubed butter, and toss to coat the pieces in flour. Do not rub the butter in.

Mix the iced water and lemon juice, pour it over, and stir with a table knife until the mixture starts to come together in a shaggy dough with visible lumps of butter. Press it into a rough rectangle.

Roll the dough out on a floured surface to a rectangle about 45 x 20 cm.

Fold the top third down and the bottom third up, like a letter, turn the dough a quarter turn, and roll it out to the same size again. Fold again.

Wrap the dough in cling film and chill for 30 minutes.
