How to Make Royal Icing

  1. Wipe the mixing bowl and the whisk attachment with kitchen paper dampened with lemon juice, to remove any trace of grease. Sift the icing sugar into the bowl.

  2. Add the egg whites and the lemon juice and mix on the lowest speed for 1 minute, until the sugar is wet through and there are no dry patches.

  3. Turn the mixer to medium-high and beat for 5 to 6 minutes, until the icing is bright white, glossy and stiff enough to hold a sharp peak when the whisk is lifted out.

  4. For piping outlines and fine details, use the icing at this stiff stage. For flooding, spoon some into a small bowl and stir in water a few drops at a time until a ribbon of icing that is lifted with a spoon melts back into the surface in about 10 seconds.

  5. Stir in gel colouring a little at a time. Press cling film on to the surface of the icing while you are not using it.

Royal icing is the icing that dries hard. It is made from nothing more than icing sugar, egg white and a few drops of lemon juice, but it can be beaten to a stiff peak for piping fine lines and delicate lace, or thinned with a little water to a smooth flood that sets to a flat, shiny surface. It covers traditional Christmas cakes and wedding cakes, and it is the icing for gingerbread houses, decorated sugar biscuits and the little iced biscuits that are sold at Easter and Christmas. The name is usually explained by the fact that it was the icing used on the cakes of royal families and on grand occasions, and it has been part of English baking for a very long time. The technique needs very little skill, but there are a few rules that decide whether it works. The bowl and beaters must be free from grease, because a trace of fat stops the egg white from building volume and stops the icing from setting hard. The icing sugar must be sifted, or lumps will block a fine piping nozzle. The icing should be kept covered while you work, since it crusts within minutes when the air gets at it.
