Melt the butter in a heavy pan over medium heat.

Add the broken vermicelli and stir constantly for 4 minutes, until every piece is the colour of strong tea. Do not walk away from it.

Add the drained rice and turn it in the butter for 2 minutes until the grains look glossy.

Pour in the hot water or stock and add the salt. Stir once, and once only.

Bring to a full boil, then cover and cook on the lowest possible heat 15 minutes without lifting the lid.

Take off the heat and leave covered for a further 10 minutes.

Fork it through gently, lifting rather than stirring, and serve.
