Put a baking tray in the oven and heat to 200°C / 400°F (180°C / 355°F fan). Put the spinach in a colander and pour over a kettle of boiling water until it wilts. Cool under cold water and squeeze it very dry in a clean tea towel, then chop roughly.

Mix the cream cheese, lemon zest and juice, dill, chives, salt and pepper in a bowl.

Unroll one sheet of pastry on a lightly floured worktop and roll it to a rectangle 5 cm longer and wider than the salmon. Slide it onto a sheet of baking parchment.

Set the salmon in the middle of the pastry and season it lightly. Spread the cream cheese mixture over the top, then cover with the spinach.

Roll out the second sheet of pastry a little larger than the first and lay it over the salmon, tucking it down the sides. Trim the edges, leaving a 2 cm border, and press them together with a fork to seal. Cut leaf or scale shapes from the trimmings to decorate.

Brush all over with beaten egg. Chill the parcel for at least 30 minutes.

Slide the parcel, still on its paper, onto the hot tray. Bake for 35 to 40 minutes, until the pastry is deep golden and the salmon reaches 52°C / 125°F in the middle.

Rest for 10 minutes, then slice with a serrated knife and serve.
