Salmon takes teriyaki well: the sweet, salty glaze sticks to the flesh and caramelises in the pan, and the fish stays soft. The sauce is only three ingredients and is made in the same pan, so the washing up is small.

Pat the skin dry and start skin-side down in a little oil over medium heat. Press the fillets flat for the first 20 seconds, so the skin does not curl and crisps evenly. Cook for 5 minutes without moving them.

Turn the fillets, pour in the soy sauce, mirin and honey, and let it bubble for 3 minutes, spooning the sauce over the fish as it thickens to a glossy glaze. If your pan runs hot, check at 2 minutes.
