  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan) with a large roasting tray inside.

  2. Toss the potatoes, onions and carrots with the oil, salt and thyme.

  3. Tip onto the hot tray in one layer and add the sausages. Roast for 25 minutes.

  4. Turn everything over and roast for 20 minutes more, until the sausages are browned and the potatoes crisp. Stir the mustard through the vegetables and serve.
