Sausage Casserole
Browned pork sausages simmered with carrots, mushrooms, butter beans and tomato in a rich, savoury gravy. Seventy-five minutes.

Heat the oil in a large flameproof casserole over medium-high heat and brown the sausages for 6 minutes, turning. Set aside.

In the same pot cook the onion, carrots and celery for 8 minutes, then the mushrooms for 5 minutes.

Add the garlic and tomato purée and cook 2 minutes, then stir in the flour for 1 minute.

Pour in the tomatoes, stock and Worcestershire sauce and add the bay leaves and thyme. Bring to a simmer, scraping up the browned bits.

Return the sausages, cover and simmer 30 minutes.

Add the beans, uncover and simmer 10 minutes more, until the gravy is thick.

Remove the bay leaves, taste for salt and scatter with parsley.
