It is the drive-through breakfast made at home, for a fraction of the cost. A sausage patty, an egg and a slice of cheese in a toasted muffin: nothing more, and nothing missing.

Form the patty from sausage meat, flattened to 1 cm and slightly wider than the muffin, because it shrinks in the pan. Fry for 4 minutes per side over medium heat until deeply browned and cooked through.

Cook the egg in the same pan, in the sausage fat. A single egg broken and set with a lid becomes a neat round that fits the muffin.

Put the cheese on the hot egg so it melts in seconds. Toast the muffin halves cut side down in the pan after the egg comes out, to take up the fat. A batch of patties can be made ahead and frozen between sheets of paper, ready to cook from frozen. Assemble the sandwiches in the morning, and the whole breakfast takes only a few minutes at the stove.
